Cheesy Cauliflower Soup

So this weekend’s instalment comes to you in the form of cauliflower soup, with cheese! Yes, cheese.

Cauliflower Soup

The recipe is as follows:


  • 1 large cauliflower, chopped into pieces
  • 1 medium onion, finely chopped
  • 1 clove of garlic, crushed
  • 160g Primula Cheese Light
  • 800ml vegetable stock


  1. Spray the finely chopped onion with low calorie cooking spray and gently cook until they are soft and translucent.
  2. Add to the pan the pieces of cauliflower, crushed garlic, vegetable stock and bring it to the boil, then simmer gently for 30 minutes, until the cauliflower is tender.
  3. Take the saucepan off the heat and transfer the soup into a liquidizer, add the tube of Primula Cheese and liquidize until it is a smooth consistency.

Tip: Delicious served with a 60g wholemeal roll (Healthy Extra ‘b’ choice)

It’s really easy to make (ready in 30 minutes) and serves 4 people, so is great if you’re entertaining or even if you just want to stock up on lunches for the week! It’s 3 syns per serving for the cheese but it really is worth it, especially if you miss cheesy things in your diet. It’s a quick fix to satisfy your naughty side, without actually being too naughty!

Happy National Coffee Day!

Happy National Coffee Day to one and all.

Coffee is completely FREE on Slimming World, and I thought I would do a quick post to tip my hat off to coffee, you beautiful bean you. Thank you for always being there for me on those sleepy mornings, late night work sprees and for your general enjoyment on a day to day basis.

Whether you like your coffee black, with sweetener, or using your Healthy Extra A choice to make a frothy coffee of your choice, coffee will always be there as your easiest pick me up! Coffee is a staple to my Slimming World lifestyle, and I wouldn’t be able to live day to day without it… Maybe I shouldn’t be admitting this?

Sorry I’ve taken a bit of a hiatus over the summer months, I have been really busy! But this post is also to let all my lovely readers know that of this Sunday I will be uploading a new post every week to help with all things Slimming World! Sugar Free Sweets


Sweets are something that you have to sign off to when you sign up to Slimming World, unless you NEED your sweetie fix and are happy to spend all your syns on sweets for a very little amount of Haribo or a Chubba Chub here or there (yes, I am 90s child. Can you tell?) When I started Slimming World I decided to give up sweets all together, I was always more of a chocolate girl anyway and I decided it was too much hassle to try and find sweets that I could actually fit into my daily allowance of syns, because lets face it, it’s not easy to dedicated all your syns in a day to ONE thing… I know I like the split my syns throughout the day on snacks, and maybe on the weekend i’ll use them to have a vodka and diet coke, or a glass of white wine. Also, sweets aren’t very easy to calculate the syn value, and when you’re on the go in the super market it’s sometimes easier just to leave the sweets and carry on with your big shop because you haven’t got the time to waste out of your super busy hectic day!


Then I discovered sugar free sweets; Why it has taken me so long I do not know, and I really thought it would be something you guys would like me to share with you, especially if you struggled as much as I did with working out normal sweets, and miss your sweetie fix whenever you go to the cinema (because God knows I did!) Working clockwise at the top you have 25g of sugar free cola bottles (which usually equal 5) and amount to 3 syns. Then you have 40g (35 pieces) of sugar free Jelly Belly’s which equates to 3.5 syns for your Jelly Belly Fix. Finally you have 25g of sugar free teddy bears (7 pieces) which works out at a nifty 2.5 syns, which means you can have your very own personal Slimming World friendly Pick and Mix for 9 syns! Even leaving you some left over to play with at the end of the day.


So there it is! Never again do you have to say goodbye to sweets 🙂 Often if you miss something that you don’t think would not be available to you on Slimming World, however there is always a way around it. Usually these sweets are made with Splenda, sweeteners which are better for you than some other branded sweeteners, which have worse reputations. Obviously always eat sweetened goods in moderation and don’t gorge yourself, like anything in life! I’m struggling at the moment, I’m trying to cut down my intake of sweetener… Trying to cut down from 2 in my tea to 1! It’ isn’t going very well…

Sorry it’s been so long since I’ve last posted. Everything is going extremely well in the world of the Slimmer Photographer. I am freelancing my photography and design skills again, which I prefer, I love working for myself at the age of 22! I’m Instagraming pictures daily (which you can view at the top of the toolbar at the top of this website), I’m doing the #100happydays challenge, which I really love and I am feeling all the benefits from the challenge which have been reported from my friends and colleagues, who also do the challenge! I’m still shooting food, and will have loads more posts coming you way over the rest of the year… I’m also starting a new exciting venture here in Manchester and Cheshire which I will announce on the site very soon! This isn’t food related, however I do think all my readers would be interested in this.

Chickpea Cake? What?!

Hello, it’s been a while yes, but i’ve been really busy so I hope you don’t mind! I’ve still been going to group though, I find that even now i’m at target it’s good to go and get weighed every week, and stay to group! It helps me maintain a healthy weight and stops me guessing between various different scales, sticking to one set of scales is really important and probably one of the best bits of advice I can give you. Staying to group also is really effective to help you have a better weight loss and help you stay on track! It keeps you focused and is also a really great way of socialising with the other slimmers in your group.

Anyway… I’m posting today about a new recipe that i’m addicted to at the moment! My friend Lynda from group put me onto it, and now i’m sharing it with you; Chickpea cake!

Chickpea Cake

No i’ve not lost my mind, I promise! It’s SO easy, and quick (for a cake!) It’s all done and dusted in 1 hour, including prep time! So enough small talk, let me share the recipe with you! 🙂

Chickpea Cake Recipe


1 tin chickpeas
1tsp baking powder
Zest and juice 1 lemon
Zest and juice 1 orange
50g sweetener
3 eggs


Line tin loaf with greaseproof paper spray with fry light. Heat oven to 180 fan assisted. Blend the chickpeas until smooth, and then add all ingredients (except the juices!) and blend until well mixed.

Pour into tin and bake for 40 mins.

Turn out onto cooling rack and drizzle with juice while warm. Leave to cool and enjoy! You could add a topping or filling of quark, sweetner and strawberries totally for free, If you wanted to; Personally I prefer the cake with no fancy add ons, this cake is so beautiful, it doesn’t need anything else, apart from squirty cream, but everything needs squirty cream!

The only syn is the baking powder but that’s for whole cake (1/2 syn).

So I really wanted to share the recipe with you guys. We also have one of these cakes to hand in our house, it’s great, and I can guarantee you a good weight loss the week you make this cake. Instead of wanting to reach out for the chocolate or the crisps you’ll be munching on a totally syn free cake!! That really is yummy, trust me, I wouldn’t lie to you… What I found was I had more syns throughout the day to use on other things, instead of running out of syns at about 4pm, I was able to have an options hot chocolate and whipped cream (2.5 syns) at 10:30pm before bed and not having to worry about my syn count.

Everything else is good, nothing really new to report. Back freelancing again after working for Cottage Delight for 2 months, I really enjoyed my time their but I am really happy i’m back working for numerous clients again now and getting in touch with new people from different areas of the photography industry. I would love to photograph food and work for Slimming World magazine one day, one can only dream… I love photographing SW food and putting it out there for you guys to see, with my own photographic spin on it!

Other than that just recovering from an operation – I’m a PCOS and Endometriosis suffer. I had Endo removed for the second time about 2 weeks ago and now I am just recovering from that really. Back at the gym now which is really good for my recovery, as long as I take it easy. And it’s also good for the body magic, which is a plus!

Salmon with Ginger & Peppers

So sometimes being healthy is complicated – you try new things to try and spice things up and keep you on track. But sometimes being healthy is just really simple, easy and quick. No strings attached and no setting aside hours of prep time and consideration. Just nip to a supermarket of your choice on the way home from work, and pick up some simple ingredients.

Salmon with Ginger, Peppers & Noodles

This salmon dish is a real winner in our house, and always goes down a treat with the slimmers and the none slimmers too! It literally takes 20 minutes to make with about 5 minutes prep time, seriously. One salmon fillet per person, place it in some tin foil and before you wrap it up and pop it into the oven sprinkle some chopped ginger on top (amount varies on how gingery you like your fish!), some chopped yellow & orange peppers and splash of soy sauce. Chop your peppers and ginger into strips and then once you’ve sprinkled them on just loosely wrap up your salmon in the foil and put on a baking tray and put on in a fan assisted oven at 180’C for 20 minutes.


Whilst the salmon is cooking you can get started with its accompaniment! We usually go for noodles, love a good noodle. We buy M&S’s noodles, they’re SO easy. Just boil some water and place one nest of noodles per person in the boiling water (not on a heat or anything, just boiled water from a pan or kettle!) and leave them to cook for 5 minutes, stirring occasionally. Usually we just serve these with some dark soy sauce, to complement the fish, but the other night we cooked the noodles and then popped them in a stir fry with red onion and leeks, and oh my goodness it was so tasty! And a brilliant way to fit in another one of your five a day.

*tip – try sprinkling your salmon fillet with some white pepper too, to give it some added punch!

Well I hope this gives you a new idea to get you effortlessly cooking in your kitchen! Me? I’ve not been up to too much to be honest. Work, gym, eat, sleep, repeat! Don’t do the gym everyday though, i’m not that good 😉 Lost 1 lb on Monday though, whoop! So only half a lb over target, weight in at 10 stone 7 lbs. Going on hols over Easter though, so want to try and shed a few pounds before then hopefully! Good luck with all this Easter chocolate about though. The Best Thing About Blogs…

The best thing about blogging is that you can come and go from it as you please – however, I have been away from my blog for some time now and for this I am really sorry. I love blogging, it’s a real release for me but these sat couple of months have been really up and down, and I hope you can excuse my absence! I’m planning on getting back on the ball with this now 🙂

The biggest news I have for you is that i’ve reached my target weight ❤ ❤ ❤ I’m over the moon, 3 stone lighter and the happiest I have EVER been in my whole life! My aim now is to keep going to my Slimming World group every week to stay within my weight range and go to the gym to keep fit and tone up, to look buff for summer! My target weight is 10 stone 6.5lbs, and once you get to target with SW you are allowed to be 3 lbs over or 3 lbs under, because as my consultant Vicky says “You have to be realistic, and realise your not going to be exactly the same weight week by week, you have to live your life”. Although, i’m 10 stone 8 lbs at the moment, because I went for a pizza to celebrate when I got to target 2 weeks ago 😉 weigh in tomorrow though, so hopefully that’ll slip back down…

There I am to the right! 3 stone lighter and a size 10! Sometimes I can’t believe it’s me, and I have to do a double take… I know that sounds mental, but I’ve come so far, it makes me feel a little emotional.

That’s one piece of advice i’d give to any other slimmers out there, or any other people in the process of loosing weight – never deny priding yourself or congratulating yourself  about what you’ve achieved; you have done this, no one else, you. We deserve to relish in what we’ve done, achieved and where we’re going with our lives. You decided to make that change and for that I salute you, you beautiful people.

There’s another reason I look all posh and smart in my piccies above – i’ve got a new job! I am now the new food photographer for Cottage Delight foods!! I love it, and I am so pleased I am now working in a profession I absolutely love. Now food photography isn’t just my hobbie or my passion, it’s my career! Every day I drive to work and say to myself “I am so lucky to be doing what I am doing”, there aren’t many people who come out of Uni and go into their chosen professional, every night I thank my lucky stars. I have this blog to thank, I practised and perfected my talent on here, and I have my lovely readers to thank for their support in me, and also my fellow slimmers at the Gatley group for instilling confidence in me, and telling me I should never give up! I’ve uploaded a picture below from a shoot I did last week at Cottage Delight on my second week at work, apologies in advance that the food isn’t Slimming World appropriate 😉

Hot Cross Bun Pudding

Well, before I go, I best provide you with the reason you come here to read my beloved blog – a recipe!! This week, due to it being Sunday, I thought i’d provide you with a Sunday roast feast!


The best thing about a roast is that you really don’t have to venture far away from a real roast. You just swap your oil for Fry Light spray! And the same with your roasties, you jus spray them with the Fry Light (potatoes, parsnips and you carrots!) and then a little salt to taste. Something we do is sprinkle our parsnips with sugar (1 tsp is 1 syn) to crisp up and really compliment the natural flavours in the parsnips. I really don’t miss the gravy at all, but if gravy is something you couldn’t live without then you could just work the syns out online via the online syn guide on the Slimming World website, or even the Syn Calculator.

Say Hello to My New Camera…

It’s only a quick post tonight with full emphasis on the photos and my new camera ❤
Sorry I have been distant recently; been really busy with work and I went away on holiday to Paris for a long weekend (pictures to come!) and now it’s very late and my bed is calling me! But I didn’t want to leave it any longer without another image instalment. I promise though that very soon I will post giving you all a proper full update, but for now here is some new work.

I am also shooting on a new piece of kit; a Canon 5d Mark iii – which has bled me dry but worth every single penny. The sensor is just amazing in the camera and shooting fantastically well in low light, so now I can get even more control over my food shots and therefore produce much better work for you all to see!

Like I say, so long for now! But I promise to give a proper full update soon, and trust me, I have lots to tell you 😉
